Who we are

Meet Ivan Romero, a passionate Chef with Mexican roots as vibrant as his dishes. Leaving Mexico City at the age of 17, he sought to uncover his true identity in America, eventually finding himself amid the busy streets of New York City. Chef Ivan started as a humble butcher, unaware that this seemingly ordinary job would pave the way to an extraordinary culinary career, awakening a passion he never knew he had.
Venturing to Connecticut, he joined the Texas Roadhouse team as a butcher. He became a sponge for information, relishing every moment as a valuable learning experience. This sparked a rapid ascent from butcher to assistant kitchen manager, and finally, opening 5 restaurants as a back-of-house training coordinator. He eventually found himself in New York City again where his culinary journey took flight, reaching new heights at Empellón, Five Leafs, Zona Rosa, and Ippudo. Chef Ivan's quest to redefine Mexican cuisine led to his freestyle approach, infusing every dish with the spirit of exploration and creativity.
Returning to Connecticut, Chef Ivan partnered with Puerto Vallarta Group, where his culinary artistry soared creating the most elevated Mexican concept opening a new and most unique  restaurant  in Stamford.                                                                                                                                                                                                                                     His travels across the USA sparked inspiration, enhancing the Mexican restaurant scene in Connecticut with layers of intricate flavors. 
Chef Ivan also empowers the industry through his consulting company "Rosemary Group." He helps restaurants revamp menus, enhance training practices, and instill sustainability. His podcast his role as Executive Chef at Kitchen accelerator program and Culinary director at CoCREATE by GE further showcase his culinary vision, inspiring food enthusiasts and professionals alike.
With each dish he crafts, Chef Ivan's passion shines bright, leaving a lasting impression on the culinary world. As an avid music enthusiast, his journey becomes a symphony of flavors, orchestrated like no other. Inspired by his beloved son, Chris, Chef Ivan leaves an indelible mark on the culinary landscape.
